Ghuzi Recipe
- Take a bowl and add two and a half inches of fresh ginger, two garlic cloves, a pinch of saffron; then mix them together until they are thoroughly combined. Now take the dry lamb – mutton – and apply this mixture on and inside it.
- Next, take a heavy-bottomed pot and pour some oil into it. Throw the mutton with its bones in the now fired up pot and allow them to cook for about 20 minutes, during which time you’d be flipping the mutton pieces to ensure they’re all cooking evenly. Your well-cooked mutton should turn brown.
- After cooking, remove the meat from the pot and place it on a plate next to the bone. Remove excess grease by wiping off with paper towel or cloth.
- Now add more oil to the pot and fry the onions in it until it turns brown and soft.
- Next, put in the pot all of the ground spices such as 3 garlic cloves, ginger, cardamom, clove buds or seeds, bay leaves, cinnamon sticks or cassia bark (similar), black peppercorns, and a small quantity of saffron.
- Add enough water to submerge the lamb in the pot and allow it to cook for about two hours or until its flesh is soft and cooked through. Afterwards, remove the bones from the meat.
- Now put the chopped meat on the roasting pan and heat up your oven to 350 degrees Fahrenheit. After pouring off all of the liquid, rub some butter and tomato sauce over the lamb then roast it for 1 hour or until tender.
- For rice and potatoes, ensure that the grains are washed well with water before boiling them. Make sure there is enough water and allow them to soak for 30 minutes before draining off all of the excess water.
- Take a baking tray and pour in some olive oil. Slice up the potatoes before tossing them in with salt and pepper. Line up the slices on the tray properly before roasting for about 30 minutes at 200 degrees Fahrenheit, or until tender enough for biting through without difficulty.
- Place 3 1⁄2 cups of lamb stock into a medium-sized saucepan. Pour in 3⁄4 cup of rice and then boil the mixture on low heat for about 15 minutes until the liquid has been absorbed by the rice.
- Meanwhile, take a small bowl and pour in orange juice, canola oil, mustard, balsamic vinegar, salt, and black pepper before whisking until well combined. Finally dress arugula with this mixture.
- When it comes time to serve, place the potatoes and arugula mixture on top of one large platter. Place the sliced lamb neatly at the center of this dish, then sprinkle with some craisins and some chopped pistachios for added flavor. Top off each dish with a Clementine before serving alongside some additional Lamb Broth Liquid on the side for those who want more.

Al Harees Recipe
You could make this delicious Arab Al Harees dish with little difficulty. Please read the following instructions thoroughly before starting and you’ll be good to go.
- Take a large pan and place it over high heat on the stove top. Fill the pot halfway with water, then pour rice and lentils in. Let the mixture come to a simmer for 30 minutes or so (until all of the liquid has been absorbed).
- Now, with the use of a mixer or blender, grind this mixture and turn it into a paste. Add more water to keep the consistency from becoming too thick and continue processing until you feel satisfied.
- Chop the chicken into small pieces separately and add crushed cumin powder, garlic paste, fennel seeds, and salt to it.
- Now mix the shredded chicken and its stock together with the wheat-barley mixture, and allow it to cook for 15 minutes. Sprinkle a pinch of cilantro masala (or other spice) to give it some extra flavor; then add lemon juice at the end.
- Pour some oil into the pan and add haleem masala when it’s hot enough to let its fragrance seep through. Cover the dish so that it doesn’t lose out on heat while cooking.
