  • 1  pound sirloin steak cubed
  • 1 14 ounce) can beef broth
  • 3  large carrots diced
  • 3  potatoes, cubed
  • 1 cup frozen green peas  thawed
  • 3 tablespoons  cornstarch
  • ⅓  cup  water
  • 2 (9 inch) refrigerator pie crusts


  • In a saucepan over medium heat, brown the sides of the pieces of meat and pour in some water to almost cover. Bring to a boil and reduce heat. Simmer until meat is tender and falls apart easily; about 2–3 hours. Transfer meat to a large mixing bowl. Shred the meat slightly and add salt and pepper to taste.
  • In a dutch oven over medium heat, pour in beef broth and add oxo cubes and vegetables. Cook until almost tender; 15 to 20 minutes. Preheat oven to 350 degrees F (175 degrees C).
  • Once your ingredients are ready, switch over to the large mixing bowl. Transfer the meat to this one, leaving the liquid in the smaller bowl because we’re going to use it later on. A good tip is to separate the peas while they’re still cooking and also add them here when everything else from the smaller bowl has been transferred over.
  • The secret ingredient to your slow cooked stew is cornstarch. First, dissolve the cornstarch in 1/3 cup of water and pour this solution into a saucepan along with beef broth. Let everything simmer for 5 minutes to thicken as you reduce the heat.
  • Place the beef mixture into a 9-inch pie plate and spread evenly. Cover with a prepared piecrust, trace a circle around it with a fork to prevent bubbling - and remove excess. Preheat oven to 400 F/200C (we used a convection oven so no need to turn on the fan). Bake for 20 minutes at 400 F / 200 C. Remove from oven and let cool 10 minutes before serving. We served this with our favorite side dishes.
